Gento Torigata
Bartender / Mixologist
Gento Torigata, born in Tokyo in 1988, embarked on his culinary journey after completing his university education. Initially trained in fine-dining French cuisine and pastry in Tokyo, he developed a solid foundation in culinary skills. However, his passion for hospitality led him to transition into the world of mixology.
In 2013, Gento made a pivotal decision to pursue bartending and joined the prestigious bar “Aileron” in Ginza, where he immersed himself in the art of bartending and Japanese hospitality. Seeking to expand his horizons, he ventured overseas to Australia, where he further refined his craft in Sydney.
His next destination was Singapore, where he assumed the roles of head bartender and bar manager at Sugarhall and then Gibson, both esteemed establishments under the Jigger & Pony group. Additionally, he spearheaded the RTD cocktail project PONY in response to the challenges posed by the COVID-19 pandemic, managing the project’s development and manufacturing processes.
In 2021, Gento made a significant move to the UK, where he currently serves as the bar manager at Kwãnt Mayfair, renowned for its excellence under the leadership of Erik Lorincz since 2023.
鳥潟 彦人 (とりがた げんと)
1988年東京都生まれ。大学卒業後、東京都内のフレンチレストランと洋菓子店で修業、料理と製菓の基礎を習得する。2013年、バーテンダーへの転向を決め、銀座の老舗バー『エルロン』に入店、バーテンダーとしての基礎を身につける。その後、海外でのキャリアを追求するため渡豪。シドニーで研鑽を積んだ後、シンガポールに移住。Jigger & PonyグループのGibsonにてヘッドバーテンダーおよびバーマネージャーを務める。またコロナ禍をきっかけに始動したRTDカクテルプロジェクトPONYではプロジェクトマネージャーを務め、製品開発と製造を指揮する。2021年、イギリスに拠点を移し、北欧と日本をテーマにした複合施設でヘッドミクソロジストとして勤務。2023年よりバーマネージャーとしてKwãnt Mayfairにて勤務する。
